# Directions:

01 - Lay out the sourdough slices. Spread butter evenly on one side of each slice. If using, spread a thin layer of mayonnaise on the other side for extra crispiness.
02 - Place two slices, buttered side down, on a clean surface. Layer each with 1 slice cheddar, 1 slice provolone, and half the shredded mozzarella.
03 - Top with the remaining bread slices, buttered side up.
04 - Heat a large skillet or griddle over medium-low heat. Place the sandwiches in the pan.
05 - Cook for 3–5 minutes per side, pressing gently, until the bread is golden brown and the cheese is fully melted. Flip carefully to avoid spillage.
06 - Transfer to a cutting board, let rest for 1 minute, then cut and serve hot.

# Expert Suggestions:

01 -
  • The combination of sharp cheddar, creamy provolone, and stretchy mozzarella creates layers of flavor you just cant get with one cheese
  • That mayonnaise trick makes the crust impossibly crispy without any fancy techniques
  • Takes twenty minutes max and uses ingredients you probably have in your fridge right now
02 -
  • Medium low heat is your friend. Rushing with high heat burns the bread before the cheese has time to melt into that perfect state.
  • Pressing too hard squeezes out all the melted cheese. Gentle pressure is all you need.
03 -
  • Shred your own mozzarella instead of buying pre shredded. The anti caking agents in pre shredded cheese prevent it from melting smoothly.
  • Use a knife to spread the mayo and butter instead of a soft spatula. You get more even coverage that way.
